OUR FARM
In the winter of 2014, our team encountered an announcement in the newspaper "From Hand to Hand" regarding the leasing of an old trout farm near Sarrion Township. This farm had lain dormant for nearly 15 years and required extensive refurbishment.
We embarked on a comprehensive reconstruction project, which included upgrading the hydro stations with two electric turbines, installing two warm water pipelines and two water pumps, and implementing an advanced water treatment system. Additionally, we constructed a protection system, oxygen stations, freezers, a vegetation workshop, preparatory and packaging workshops, finished product warehouses, and a wintering zone with water cooled to +3 degrees.
These efforts resulted in an environment that closely emulates natural habitats, encompassing seasonal temperature variations (spring, summer, autumn, winter), flow rates akin to natural river currents, and extended wintering periods at reduced temperatures.
Consequently, the Esturion de Sarrion farm emerged as the first (and currently the only) facility in Europe to cultivate sturgeon in running water under optimal natural conditions.

NATURE
Situated in the mountains of the Aragon province, the farm lies at the junction of three rivers: the cold Albentos and Mijares, with temperatures between +13 and +17˚C, and the warm underground Orcajo, which stays at +20 to +22˚C year-round. This unique mix of water sources with different temperatures creates the perfect conditions for breeding sturgeon.
The pure, mineral-rich blue rivers contribute essential elements that enhance the natural taste of black caviar. Recognizing these ideal conditions, we used these natural resources to establish an optimal environment for sturgeon cultivation. This not only ensures the health of the fish but also imparts a superior, natural flavor to the caviar.

PROCESS
Our farm staff are passionate professionals who are fanatically dedicated to their work. Each of our products is crafted with exceptional care. Our team is firmly against killing animals, so we harvest caviar by gently massaging the fish's belly.
We feed the mother flock with premium diets based on krill, fish meal, and fish oil. These high-protein foods closely resemble what sturgeon eat in the wild. Adhering to Spain's strict sanitary and epidemiological standards, we do not use antibiotics, hormones, or other additives. The pristine waters of our rivers, combined with our quality feed and advanced technology, give our black caviar its uniquely natural taste.
